Raita is a flavoured yogurt used as an accompaniment to balance the flavours in an Indian meal. Boondi are tiny-spiced gram flour balls that lend a unique texture and taste to the raita.

Serves: 4 people

Health Hack: Yogurt mixed with spices acts as a cooling agent and aids digestion.

Fresh Ingredients

  • Boondi – 70 grams
  • Yogurt -500 grams
  • Fresh coriander - 2 tbsp, finely chopped
  • Milk - 100 mls to adjust consistency

Spices

  • Himalayan salt – 1/8 tsp.
  • Roasted cumin powder - ½ tsp.
  • Kashmiri chilli powder - ½ tsp.

Cooking Instructions

  • Whisk yogurt with a little milk until it has a smooth consistency.
  • Soak Boondi separately in water for a couple of minutes and then gently squeeze out the water from the gram flour balls
  • Add salt, half the roasted cumin powder and half of the chopped coriander to the yogurt
  • Add Boondi to the yogurt and mix well
  • Garnish with the remaining roasted cumin powder, kashmiri chilli powder and chopped coriander
  • Serve chilled and enjoy as an accompaniment to your meal.

Handy Kitchen Tips

Boondi can soak up liquid from yogurt so if the Raita looks thick just add a
dash of milk or water before serving.
