BOONDI RAITA

Raita is a flavoured yogurt used as an accompaniment to balance the flavours in an Indian meal. Boondi are tiny-spiced gram flour balls that lend a unique texture and taste to the raita.

Fresh Ingredients
- Boondi – 70 grams
- Yogurt -500 grams
- Fresh coriander - 2 tbsp, finely chopped
- Milk - 100 mls to adjust consistency
Spices
- Himalayan salt – 1/8 tsp.
- Roasted cumin powder - ½ tsp.
- Kashmiri chilli powder - ½ tsp.
Cooking Instructions
- Whisk yogurt with a little milk until it has a smooth consistency.
- Soak Boondi separately in water for a couple of minutes and then gently squeeze out the water from the gram flour balls
- Add salt, half the roasted cumin powder and half of the chopped coriander to the yogurt
- Add Boondi to the yogurt and mix well
- Garnish with the remaining roasted cumin powder, kashmiri chilli powder and chopped coriander
- Serve chilled and enjoy as an accompaniment to your meal.

Handy Kitchen Tips
Boondi can soak up liquid from yogurt so if the Raita looks thick just add a
dash of milk or water before serving.
