Classic Indian Home Cooking


This hands-on class is a perfect introduction to Indian home-cooking for beginners and more experienced cooks. In this class you will learn to make a full Indian meal including four classic Indian recipes from scratch using fresh ingredients.

The dishes taught in these classes vary considering ingredients and food that is generally available and consumed during different times of the year. The menu typically includes a vegetarian and a meat/seafood main dish along with rice and accompaniments (raita or chutney). In addition to cooking these classic recipes, you will also learn about the history, traditions and stories behind these dishes.

As part of this experience, you will gain valuable tips to set up your own little Indian kitchen and preparing basics such as spice blends, pastes etc to make your life easier when cooking Indian food. We also spend time discussing and going through my spice pantry which will leave you with a greater understanding of the application and benefits of various spices used every day in Indian cooking.

My classes are hands-on, fun and sociable. We will start the day with a cup of masala chai or lassi while discussing the menu. You will then roll up your sleeves and get stuck in preparing the dishes after which we will sit down together and enjoy the food you’ve cooked, or you can take food home if you prefer.

Aprons, recipe sheets and all ingredients are provided and all you need to bring is your enthusiasm and a healthy appetite for delicious home food!

MENU 1

  • Mushroom Matar Masala (Mushrooms and peas cooked in an onion tomato sauce)
  • Palak Murgh (Spinach chicken)
  • Jeera Basmati Rice (Basmati rice flavoured with cumin and onions)
  • Pineapple Mint Raita (Yogurt flavoured with pineapple and mint)

MENU 2

  • Keema Matar (Minced lamb cooked with peas in aromatic spices)
  • Punjabi Dal Fry (Classic North Indian lentils)
  • Jeera Basmati (Basmati rice flavoured with cumin and onions)
  • Aloo Pyaaz Raita (Yogurt flavoured with boiled potato and red onion)

MENU 3

  • Coriander Chicken Curry (Chicken cooked in a paste of fresh coriander, mint and spices)
  • Adraki Aloo Gobi (Cauliflower and potatoes cooked with fresh ginger and turmeric)
  • Jeera Basmati Rice (Basmati rice flavoured with cumin and onions)
  • Mixed Vegetable Raita (Yogurt flavoured with finely chopped vegetables)

Nidhi guided us through each step of every dish and we particularly loved hearing about the origin of the food as well as snippets of her family history. Nidhi was incredibly patient with us complete novices and she made everything look very easy. We had our first try at a 'recreation' last night and food turned out to be absolutely delicious!
